This weekend, Laura and I visited the Sugar Syndicate, a Chicago wedding cake company started by Chef Cathay Rayhill. The Sugar Syndicate is part of the Sweet Collective, an association of three extremely talented pastry chefs.
We received three mini-cakes, each with a different filling, needing to pick two. The first was white cake with lemon and fresh berries, the second was chocolate with white chocolate peppermint ganache, and white cake with mango curd and fresh strawberries. All three were delicious, and after a lot of deliberation, we decided to go with the chocolate and the mango. Of course, we got to take the leftover cake home. Somehow, there’s still a few bites of each left in the fridge.
The best part is, rather than leaving the top layer for us to eat a year later, Chef Cathay gives us a voucher for a mini-cake which she’ll make for us on our 1-year anniversary!
